Ingredients
For this recipe you need:
- 3 kg cucumbers
- 3 liters of water
- 6 tablespoons coarse salt for pickles
- 400 g sugar
- 360 ml 9% vinegar
- 2 teaspoons mustard seeds
- 3 bay leaves
Method of preparation
1. Preparing cucumbers
Wash the cucumbers very well, then put them in a bowl of cold water for about 2 hours.
This step helps them stay firmer and crispier.
After they have soaked, cut off the ends of the cucumbers from both sides. If they are bigger, you can cut them into suitable pieces. If they are small, you can leave them whole or cut them in half.
2. Marinade preparation
In a large pot, put those 3 liters of water.
Add:
- salt;
- the sugar;
- mustard seeds;
- bay leaves.
Put the pot on the fire and let the marinade reach the boiling point.
When it starts to boil, add 9% vinegar and let the mixture boil again.
3. Boiling cucumbers in the marinade
Add the cucumbers to the hot marinade and mix gently.
Give it a few minutes, until you notice that they start to change color. After they become slightly lighter, boil them for about 3 minutes.
Then take the pot off the heat.
