Method of preparation:
- Vegetable preparation
- Wash and clean vegetables.
- Grate the carrots, parsley and celery into a large grater or into a robot.
- Chop the onion and pepper into small cubes.
- The tomatoes are put through a blender or a mincer.
- Mixing
- In a large bowl, mix all the vegetables.
- Add salt and chopped greens.
- Mix well and leave for 30 min, leave the juice and combine the flavors.
Preservation at jars 🫙
- Sterilization of jars
- Wash jars and lids.
- Put them in a tray in the oven at 120°C for 15 minutes OR boil them for 10 minutes in boiling water.
- Filling jars
- Put the raw vegetables (with all the juice left) in the jars, pressing well so that no air gaps remain.
- Leave 1 cm free until the mouth of the jar.
- Closing
- Close the sterilized caps tightly.
- Place the jars in a large pot, on the bottom of which you place a towel.
- Pour warm water up to the shoulder level of the jars.
- Final sterilization
- Boil the jars for 30 minutes from the moment the water starts to boil.
- Carefully remove them, turn them upside down and let them cool under a blanket.
- Storage
- After cooling, move the jars to the pantry, in a cool and dark place.
✅The result: in winter, add 2-3 tablespoons of vegetables to a pot of soup and taste and color like you just picked vegetables from the garden! 🌱🍲
